Gilberto Gonzalez Verdejo is the creator of Pasta Della Nonna, a fine dining establishment in Goshen, NY, renowned for its authentic Italian cuisine and elegant ambiance. Hailing from Cancun, Mexico, Gilberto embarked on his culinary journey in 2002, driven by an enduring passion for hospitality and a vision of excellence in dining.
He began his career in the dynamic culinary scene of Manhattan, refining his expertise in Italian gastronomy while working in esteemed establishments. In 2010, Gilberto transitioned to the Hudson Valley, where he elevated his craft in several prestigious fine dining venues, building a reputation for his dedication to precision, artistry, and quality.
On August 5, 2024, Gilberto realized his long-held dream by founding Pasta Della Nonna, a sophisticated dining destination that seamlessly marries the richness of Italian tradition with contemporary elegance. Together with his trusted partners, Angel and Paco, Gilberto has cultivated an exceptional culinary experience that highlights meticulously sourced ingredients, masterful preparation, and impeccable service.
