Originally from Cancún, Mexico, Gilberto began his culinary journey in 2002, driven by a deep passion for hospitality and a commitment to excellence in the dining experience.
His early career unfolded in the vibrant culinary scene of Manhattan, where he honed his expertise in Italian gastronomy while working in some of the city’s most esteemed establishments. In 2010, he brought his talents to the Hudson Valley, further developing his craft in several prestigious fine dining venues. There, Gilberto earned a reputation for precision, artistry, and an uncompromising dedication to quality.
On August 5, 2024, Gilberto realized his long-held dream with the opening of Pasta Della Nonna—a sophisticated restaurant that seamlessly marries the depth of Italian culinary tradition with contemporary elegance.
